Five years on, He is still the best person I know. I am beyond glad to have this guy by my side.  He is the greatest.

We took a little adventure around the roads of Central Hawkes Bay and the Manawatu region. Stopping by every  Op Shop, Curios and Second Hand dealer we could find. The sun shone and the ginger ale flowed. It was our kind of holiday. Maybe more so if I could’ve swapped some ginger ale for Naths cider, but I am not complaining…much.

In other news, the final countdown in commencing, with but THREE WEEKS until we hope to meet our Coco Darling . So it is battle stations here. Just casually setting up her little corner, washing clothes, making freezer meals and generally nesting up a very big storm.

RENO LIFE NO.1

I can barely comprehend where the last month has gone. We have moved house, Moved cities, Had a house move cities and started renovation on our first home. Two days without power and 11 days without hot water, we are finally beginning to feel like we have some sort of a home. It has been non stop to say the least. But with the help our our incredible family and friends, it has been a lot easier than it could’ve been. And for that we are beyond thankful.With everything going on with our lives and with our Coco Darling, it was so important to make some sort of a haven for us. So after getting the house weather proof and liveable our first port of call is to finish our master bedroom. And we cannot wait to show it to you. It is pretty darn exciting really.So watch this space, it shouldn’t be too long now.

CORNERS // goodbye home

I don’t think I ever get that used to moving. Although now I am somewhat of a professional.

The Husband and I have moved five times over the last four years. We are yet to stay in a home for a year. And here we are, a mere five months after moving into our current abode we are packing again. But this time for a bigger move. Into our own home, and down to the Hawkes bay. We say it will be for a while, but we have said that every move. Suckers for punishment, or adventures in opportunity. Either way, here we go again.

So as I do every time I leave, I document, I take not of the little things that I love and the things I will miss. See more of our home HERE

MAKE IT // Lentil Shepard Pie

This is my go to meal. When I am tired and really cannot be bothered. So, basically we eat this a lot.

And this dismal day in Auckland, ( I am not going to lie, I am puuuumped on this weather, see you later swollen feet. )  It is perfect. It is quick, it is easy, it is delish, and the best comfort food.  You will need:

FILLING
1 can lentils in brine
1 leek, sliced
1 carrot, diced
1 1/2 cup peas
6 button mushrooms, sliced
Cornflour
Thyme
Butter
Salt and pepper to taste

TOPPING
4 potatoes
Milk
Butter
Salt and pepper
Cheese, grated

First off get your potatoes on to boil. Peel them, dice them, chuck them in the pot of water with a little salt. Boil until soft. Meanwhile, cut all your veg for the filling. In a large pot, melt a knob or so of butter, toss in the leek and saute. Next the carrots. Keep stirring, on a medium heat. Add mushrooms then finally peas and lentils, including the brine. Turn to low, chuck on the lid and let simmer, stirring occasionally. When your potatoes are soft, drain them. Chuck a knob of butter, a tablespoon of milk and mash. Add salt and pepper to taste.

Now sift in a teaspoon of cornflour at a time till you get a thick sause. Add the thyme, salt and pepper to taste.

Empty the filling into a deep dish, dollop the topping on top, even it out and criss-cross with a fork, sprinkle a little cheese on top if you want. Grill/Broil until golden! Delish!
